Ingredients

  • Fresh cilantro - 50 grams
  • Garlic - 2 cloves
  • Lime - 1 (juiced)
  • Olive oil - 2 tablespoons
  • Cherry tomatoes - 100 grams (halved)
  • Red onion - 1/4 (finely chopped)
  • Salt - to taste
  • Black pepper - to taste
  • Grated cheese (optional) - 30 grams

Steps

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a blender, combine the cilantro, garlic, lime juice, olive oil, salt, and black pepper. Blend until smooth to create the cilantro sauce.
  3. In a large skillet over medium heat, add the chopped red onion and sauté for 2-3 minutes until translucent.
  4. Add the cherry tomatoes to the skillet and cook for an additional 2 minutes until they start to soften.
