- Chopped nuts (almonds or walnuts) - 20 grams
- Fresh fruit (berries or mango) - 50 grams, for garnish
Steps
- In a mixing bowl, combine the rice flour, water, coconut milk, agave syrup, cinnamon powder, and vanilla extract. Mix until the batter is smooth and free of lumps.
- Heat a non-stick skillet over medium heat and lightly grease it with a bit of oil.
- Pour a small amount of the batter into the skillet, swirling it to create a thin, even layer. Cook for about 2-3 minutes until the edges lift and the surface is set.
- Carefully flip the papelito and cook for another 1-2 minutes. Remove from the skillet and place on a plate. Repeat with the remaining batter.
- In a separate bowl, mix the mashed banana with the chopped nuts.
- Take one papelito and spoon a portion of the banana mixture onto the center. Fold the edges over to create a parcel.
- Serve the papelitos warm, garnished with fresh fruit.
