- Cheddar cheese - 50 grams, shredded
- Olive oil - 1 tablespoon
- Cumin powder - 1 teaspoon
- Chili powder - 1 teaspoon

- Black pepper - to taste
Steps
- Heat the olive oil in a pan over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the ground beef to the pan, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
- Stir in the diced red bell pepper, cumin, chili powder, salt, and black pepper. Cook for another 5 minutes until the pepper is tender.
- Remove the pan from heat and mix in the chopped cilantro and shredded cheese until melted.
- Warm the corn tortillas in a separate skillet until pliable.
- Spoon a portion of the beef mixture onto each tortilla, folding it over to create a pocket, and secure with a toothpick if needed.
- Serve warm, optionally with salsa or guacamole.
