  • Cilantro - 2 tablespoons, chopped
  • Cheddar cheese - 50 grams, shredded
  • Olive oil - 1 tablespoon
  • Cumin powder - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the olive oil in a pan over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  2. Add the ground beef to the pan, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  3. Stir in the diced red bell pepper, cumin, chili powder, salt, and black pepper. Cook for another 5 minutes until the pepper is tender.
  4. Remove the pan from heat and mix in the chopped cilantro and shredded cheese until melted.
  5. Warm the corn tortillas in a separate skillet until pliable.
  6. Spoon a portion of the beef mixture onto each tortilla, folding it over to create a pocket, and secure with a toothpick if needed.
  7. Serve warm, optionally with salsa or guacamole.
