Ingredients

  • Chicken breast - 300 grams
  • Bell pepper (red) - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Red onion - 1/2 medium, diced
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lettuce leaves (for wrapping) - 4 large leaves
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced

Steps

  1. Preheat a skillet over medium heat and add olive oil.
  2. Season the chicken breast with salt, black pepper, cumin, and chili powder.
  3. Add the seasoned chicken to the skillet and cook for 6-7 minutes on each side, or until fully cooked. Remove from skillet and allow to rest.
  4. In the same skillet, add garlic, red onion, bell pepper, and zucchini. Sauté for about 5-6 minutes until the vegetables are tender.
  5. Shred the cooked chicken and add it back to the skillet with the vegetables. Mix well and cook for an additional 2 minutes.
  6. Remove from heat and add lime juice and chopped cilantro, stirring to combine.
  7. To serve, spoon the chicken and vegetable mixture onto large lettuce leaves, wrap them like a burrito, and enjoy.
