Ingredients
- Chicken breast - 300 grams
- Bell pepper (red) - 1 medium, diced
- Zucchini - 1 medium, diced
- Red onion - 1/2 medium, diced
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lettuce leaves (for wrapping) - 4 large leaves
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
Steps
- Preheat a skillet over medium heat and add olive oil.
- Season the chicken breast with salt, black pepper, cumin, and chili powder.
- Add the seasoned chicken to the skillet and cook for 6-7 minutes on each side, or until fully cooked. Remove from skillet and allow to rest.
- In the same skillet, add garlic, red onion, bell pepper, and zucchini. Sauté for about 5-6 minutes until the vegetables are tender.
- Shred the cooked chicken and add it back to the skillet with the vegetables. Mix well and cook for an additional 2 minutes.
- Remove from heat and add lime juice and chopped cilantro, stirring to combine.
- To serve, spoon the chicken and vegetable mixture onto large lettuce leaves, wrap them like a burrito, and enjoy.
