Ingredients
- Black beans - 200 grams, cooked
- Corn tortillas - 4 pieces
- Red bell pepper - 1, diced
- Zucchini - 1 small, diced
- Red onion - 1 small, diced
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
Steps
- In a large skillet, heat olive oil over medium heat and add diced red onion and garlic. Sauté for about 3 minutes until softened.
- Add diced red bell pepper and zucchini to the skillet and cook for another 5 minutes until the vegetables are tender.
- Stir in the cooked black beans, cumin, smoked paprika, salt, and black pepper. Cook for an additional 5 minutes, then remove from heat and stir in lime juice and chopped cilantro.
- Take a corn tortilla and place a generous amount of the bean and vegetable mixture in the center. Fold the sides over to create a packet, then wrap it in aluminum foil to secure.
- Repeat with the remaining tortillas and filling.
- Preheat a grill to medium heat. Place the foil packets on the grill and cook for about 10-15 minutes, turning occasionally.
- Remove from the grill, let cool slightly, then unwrap and serve warm with additional cilantro and lime wedges on the side.
