Ingredients

  • Black beans - 200 grams, cooked
  • Corn tortillas - 4 pieces
  • Red bell pepper - 1, diced
  • Zucchini - 1 small, diced
  • Red onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced

Steps

  1. In a large skillet, heat olive oil over medium heat and add diced red onion and garlic. Sauté for about 3 minutes until softened.
  2. Add diced red bell pepper and zucchini to the skillet and cook for another 5 minutes until the vegetables are tender.
  3. Stir in the cooked black beans, cumin, smoked paprika, salt, and black pepper. Cook for an additional 5 minutes, then remove from heat and stir in lime juice and chopped cilantro.
  4. Take a corn tortilla and place a generous amount of the bean and vegetable mixture in the center. Fold the sides over to create a packet, then wrap it in aluminum foil to secure.
  5. Repeat with the remaining tortillas and filling.
  6. Preheat a grill to medium heat. Place the foil packets on the grill and cook for about 10-15 minutes, turning occasionally.
  7. Remove from the grill, let cool slightly, then unwrap and serve warm with additional cilantro and lime wedges on the side.
