Ingredients

  • Corn masa - 1 cup
  • Black beans (cooked and mashed) - 1/2 cup
  • Onion (finely chopped) - 1/4 cup
  • Garlic (minced) - 2 cloves
  • Cilantro (chopped) - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Banana leaves (cut into squares) - 4 pieces
  • Olive oil - 1 tablespoon

Steps

  1. In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  2. In a bowl, combine the sautéed onion and garlic with the mashed black beans, chopped cilantro, lime juice, and salt. Mix until well combined.
  3. Take a square of banana leaf and place a portion of corn masa (about 1/4 cup) in the center. Flatten it slightly, then add a spoonful of the black bean mixture on top.
  4. Fold the banana leaf over the masa and filling to form a packet, sealing the edges. Repeat with the remaining masa and filling.
  5. Place the packets in a steamer basket and steam for about 25-30 minutes until the masa is cooked through.
  6. Remove from the steamer, unwrap the papalotes, and serve warm with avocado slices and salsa if desired.
