Ingredients

  • Corn masa - 200 grams
  • Mushrooms (button or cremini) - 150 grams, chopped
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cilantro - 2 tablespoons, chopped
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Water - 100 ml for masa + extra as needed

Steps

  1. In a skillet over medium heat, add olive oil and sauté the chopped onion until translucent, about 3 minutes.
  2. Add minced garlic and chopped mushrooms to the skillet, cooking for an additional 5-7 minutes until the mushrooms are softened and browned.
  3. Stir in cumin, smoked paprika, salt, pepper, and chopped cilantro, and cook for another 2 minutes. Remove from heat and let the filling cool slightly.
  4. In a mixing bowl, combine the corn masa with 100 ml of water, mixing until a smooth dough forms. Add additional water as necessary to achieve a pliable consistency.
  5. Divide the masa into two equal portions and flatten each into a circle about 1/4 inch thick.
  6. Place a tablespoon of the mushroom filling in the center of each masa circle. Fold the sides over the filling to create a rectangular shape, sealing the edges firmly.
  7. Preheat a grill or skillet over medium heat and lightly grease it. Place the papalotes on the grill and cook for about 5-7 minutes on each side until golden brown and cooked through.
  8. Remove from heat, let cool slightly, and serve warm, garnished with extra cilantro if desired.
