Ingredients
- Corn masa - 200 grams
- Mushrooms (button or cremini) - 150 grams, chopped
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cilantro - 2 tablespoons, chopped
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Water - 100 ml for masa + extra as needed
Steps
- In a skillet over medium heat, add olive oil and sauté the chopped onion until translucent, about 3 minutes.
- Add minced garlic and chopped mushrooms to the skillet, cooking for an additional 5-7 minutes until the mushrooms are softened and browned.
- Stir in cumin, smoked paprika, salt, pepper, and chopped cilantro, and cook for another 2 minutes. Remove from heat and let the filling cool slightly.
- In a mixing bowl, combine the corn masa with 100 ml of water, mixing until a smooth dough forms. Add additional water as necessary to achieve a pliable consistency.
- Divide the masa into two equal portions and flatten each into a circle about 1/4 inch thick.
- Place a tablespoon of the mushroom filling in the center of each masa circle. Fold the sides over the filling to create a rectangular shape, sealing the edges firmly.
- Preheat a grill or skillet over medium heat and lightly grease it. Place the papalotes on the grill and cook for about 5-7 minutes on each side until golden brown and cooked through.
- Remove from heat, let cool slightly, and serve warm, garnished with extra cilantro if desired.
