Ingredients

  • Black beans - 200 grams (cooked)
  • Corn tortillas - 4 pieces
  • Red onion - 50 grams (finely chopped)
  • Garlic - 2 cloves (minced)
  • Cilantro - 20 grams (chopped)
  • Lime - 1 (juiced)
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Pepper - 1/2 teaspoon
  • Avocado - 1 (sliced, for garnish)
  • Salsa - 100 grams (for serving)

Steps

  1. In a skillet, heat the olive oil over medium heat. Add the chopped red onion and minced garlic, and sauté until translucent, about 3-4 minutes.
  2. Add the cooked black beans to the skillet, along with lime juice, salt, and pepper. Stir well and cook for another 5 minutes, allowing the flavors to meld.
  3. Remove the skillet from heat and stir in the chopped cilantro.
  4. Warm the corn tortillas in a separate skillet for about 30 seconds on each side until pliable.
  5. Place a generous spoonful of the black bean mixture in the center of each tortilla, fold the sides over, and roll it up tightly to form a burrito-like shape.
  6. Grill the wrapped tortillas on a hot grill pan for 2-3 minutes on each side, until they get nice grill marks and are slightly crispy.
  7. Serve the Papalote de Frijoles warm, garnished with sliced avocado and accompanied by salsa.
