Ingredients
- Black beans - 200 grams, cooked and drained
- Coconut flour - 50 grams
- Water - 100 ml
- Olive oil - 1 tablespoon
- Garlic powder - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Avocado - 1 medium, sliced
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
Steps
- In a mixing bowl, combine the coconut flour, olive oil, and salt. Gradually add water until a dough forms. Knead for a few minutes until smooth.
- Divide the dough into 4 equal portions and roll each portion into a ball. Flatten each ball into a thin tortilla using a rolling pin or your hands.
- Heat a non-stick skillet over medium heat. Cook each tortilla for about 2-3 minutes on each side until lightly browned and cooked through. Set aside.
- In a bowl, mash the cooked black beans with garlic powder, cumin, and lime juice until slightly chunky but spreadable.
- Spread a generous amount of the black bean mixture onto each tortilla, then top with avocado slices and chopped cilantro.
- Fold the tortillas over to form a half-moon shape, pressing gently to secure the filling. Serve warm.
