  • Salt - 1/2 teaspoon
  • Avocado - 1 medium, sliced
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced

Steps

  1. In a mixing bowl, combine the coconut flour, olive oil, and salt. Gradually add water until a dough forms. Knead for a few minutes until smooth.
  2. Divide the dough into 4 equal portions and roll each portion into a ball. Flatten each ball into a thin tortilla using a rolling pin or your hands.
  3. Heat a non-stick skillet over medium heat. Cook each tortilla for about 2-3 minutes on each side until lightly browned and cooked through. Set aside.
  4. In a bowl, mash the cooked black beans with garlic powder, cumin, and lime juice until slightly chunky but spreadable.
  5. Spread a generous amount of the black bean mixture onto each tortilla, then top with avocado slices and chopped cilantro.
  6. Fold the tortillas over to form a half-moon shape, pressing gently to secure the filling. Serve warm.
