- baking powder - 1 tsp
- cinnamon - 1/2 tsp
- almond milk - 3/4 cup (180ml)
- maple syrup - 2 tbsp
- vanilla extract - 1 tsp
- coconut oil - for cooking
Steps
- In a large bowl, mash the ripe bananas with a fork until smooth.
- Add the almond milk, maple syrup, and vanilla extract to the mashed bananas, mixing well.
- In another bowl, whisk together the all-purpose flour, baking powder, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
- Heat a non-stick skillet over medium heat and add a little coconut oil.
- Pour 1/4 cup of the batter onto the skillet for each pancake, cooking for about 2-3 minutes until bubbles form on the surface.
