  • baking powder - 1 tsp
  • cinnamon - 1/2 tsp
  • almond milk - 3/4 cup (180ml)
  • maple syrup - 2 tbsp
  • vanilla extract - 1 tsp
  • coconut oil - for cooking

Steps

  1. In a large bowl, mash the ripe bananas with a fork until smooth.
  2. Add the almond milk, maple syrup, and vanilla extract to the mashed bananas, mixing well.
  3. In another bowl, whisk together the all-purpose flour, baking powder, and cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  5. Heat a non-stick skillet over medium heat and add a little coconut oil.
  6. Pour 1/4 cup of the batter onto the skillet for each pancake, cooking for about 2-3 minutes until bubbles form on the surface.
  7. Flip the pancakes and cook for another 2-3 minutes or until golden brown.
  8. Repeat with the remaining batter, adding oil to the skillet as needed.
