Ingredients
- Fresh corn kernels - 200 grams
- All-purpose flour - 100 grams
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Sugar - 2 tablespoons
- Milk - 150 ml
- Egg - 1 large
- Butter - 30 grams (melted) + extra for cooking
- Cilantro - 2 tablespoons (chopped, optional)
- Feta cheese or Cotija cheese - for serving (optional)
Steps
- In a blender, combine the fresh corn kernels and milk, and blend until smooth.
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- In another bowl, beat the egg and add the melted butter and the corn-milk mixture, mixing well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. If desired, fold in chopped cilantro.
- Heat a non-stick skillet over medium heat and add a small amount of butter.
- Pour about 1/4 cup of batter onto the skillet for each pancake and cook for 2-3 minutes until bubbles form on the surface.
- Flip the pancakes and cook for another 2-3 minutes until golden brown.
- Repeat until all the batter is used, adding more butter as needed.
- Serve warm, topped with crumbled feta or Cotija cheese and a drizzle of honey, if desired.
