- Bolillo rolls - 2
- Potato - 200 grams, peeled and diced
- Black beans - 100 grams, cooked and drained
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Green salsa - 100 ml
- Vegetable oil - 2 tablespoons
- Salt - 1 teaspoon
- Pepper - 1/2 teaspoon
- Cilantro - 2 tablespoons, chopped
- Queso fresco - 50 grams, crumbled
- Avocado - 1, sliced
Steps
- In a pot, boil the diced potatoes in salted water until tender, about 10-15 minutes. Drain and mash slightly.
- In a skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the chopped onion and garlic, sautéing until soft and fragrant, about 3-4 minutes.
- Add the cooked black beans and mashed potatoes to the skillet, seasoning with salt and pepper. Stir in the chopped cilantro and cook for another 5 minutes until heated through.
- In a shallow dish, pour the green salsa. Lightly dip each bolillo roll into the salsa, ensuring both sides are coated.
- In the same skillet, heat the remaining tablespoon of vegetable oil over medium heat. Place the salsa-dipped bolillos in the skillet and toast until golden brown, about 2-3 minutes on each side.
- Remove the bolillos from the skillet and fill each with the potato and bean mixture. Top with crumbled queso fresco and avocado slices.
- Serve immediately, garnished with extra cilantro if desired.
