Ingredients

  • Bolillo rolls - 2
  • Potato - 200 grams, peeled and diced
  • Black beans - 100 grams, cooked and drained
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Green salsa - 100 ml
  • Vegetable oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Pepper - 1/2 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Queso fresco - 50 grams, crumbled
  • Avocado - 1, sliced

Steps

  1. In a pot, boil the diced potatoes in salted water until tender, about 10-15 minutes. Drain and mash slightly.
  2. In a skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the chopped onion and garlic, sautéing until soft and fragrant, about 3-4 minutes.
  3. Add the cooked black beans and mashed potatoes to the skillet, seasoning with salt and pepper. Stir in the chopped cilantro and cook for another 5 minutes until heated through.
  4. In a shallow dish, pour the green salsa. Lightly dip each bolillo roll into the salsa, ensuring both sides are coated.
  5. In the same skillet, heat the remaining tablespoon of vegetable oil over medium heat. Place the salsa-dipped bolillos in the skillet and toast until golden brown, about 2-3 minutes on each side.
  6. Remove the bolillos from the skillet and fill each with the potato and bean mixture. Top with crumbled queso fresco and avocado slices.
  7. Serve immediately, garnished with extra cilantro if desired.
