Ingredients

  • Bolillo rolls - 2
  • Potatoes - 200 grams
  • Vegan chorizo - 100 grams
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Green bell pepper - 1/2, diced
  • Vegetable broth - 100 ml
  • Tomato - 1 large, blended into a puree
  • Dried guajillo chiles - 2, stems and seeds removed
  • Cumin - 1 tsp
  • Olive oil - 1 tbsp
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Boil the potatoes in salted water until tender, about 15 minutes. Drain and let cool, then mash them in a bowl.
  2. In a skillet, heat olive oil over medium heat. Add onions, garlic, and green bell pepper, and sauté until soft, about 5 minutes.
  3. Add the vegan chorizo to the skillet and cook for another 5 minutes, stirring occasionally.
  4. Mix the mashed potatoes into the skillet with the chorizo mixture, season with cumin, salt, and black pepper, and stir until well combined. Remove from heat.
  5. In a separate pot, soak the guajillo chiles in hot water for 10 minutes, then blend with the tomato puree until smooth to create the sauce.
  6. Preheat a skillet over medium heat. Dip each bolillo roll into the guajillo sauce, ensuring they are coated but not soggy.
  7. Place the coated bolillos in the skillet and toast until golden brown on both sides, about 3-4 minutes per side.
  8. Once toasted, fill each bolillo with the potato and chorizo mixture, and garnish with fresh cilantro before serving.
