- Bolillo rolls - 2
- Potatoes - 200 grams
- Vegan chorizo - 100 grams
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Green bell pepper - 1/2, diced
- Vegetable broth - 100 ml
- Tomato - 1 large, blended into a puree
- Dried guajillo chiles - 2, stems and seeds removed
- Cumin - 1 tsp
- Olive oil - 1 tbsp
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Boil the potatoes in salted water until tender, about 15 minutes. Drain and let cool, then mash them in a bowl.
- In a skillet, heat olive oil over medium heat. Add onions, garlic, and green bell pepper, and sauté until soft, about 5 minutes.
- Add the vegan chorizo to the skillet and cook for another 5 minutes, stirring occasionally.
- Mix the mashed potatoes into the skillet with the chorizo mixture, season with cumin, salt, and black pepper, and stir until well combined. Remove from heat.
- In a separate pot, soak the guajillo chiles in hot water for 10 minutes, then blend with the tomato puree until smooth to create the sauce.
- Preheat a skillet over medium heat. Dip each bolillo roll into the guajillo sauce, ensuring they are coated but not soggy.
- Place the coated bolillos in the skillet and toast until golden brown on both sides, about 3-4 minutes per side.
- Once toasted, fill each bolillo with the potato and chorizo mixture, and garnish with fresh cilantro before serving.
