- Guajillo chili (dried) - 2

- Cilantro (chopped) - 2 tablespoons
- Lettuce (shredded) - 1 cup

- Lime wedges - 2

Steps
- Soak the guajillo chilies in hot water for about 10 minutes until soft, then blend with garlic and a pinch of salt to make a smooth sauce.
- In a pot, boil diced potatoes in salted water until tender, about 10 minutes, then drain and set aside.
- In a skillet, cook the chopped onion until translucent, then add the chorizo and cook until browned and thoroughly cooked.
- Add the boiled potatoes to the skillet with the chorizo, mixing well to combine, and cook for an additional 2-3 minutes.
- Dip each bolillo roll in the chili sauce until well coated, then fill them with the chorizo and potato mixture.
- Heat a non-stick skillet over medium heat and toast the filled bolillos on both sides for about 2 minutes each until golden brown.
- Serve the pambazos topped with shredded lettuce, avocado slices, and cilantro, with lime wedges on the side.
