Ingredients

  • Whole wheat bolillo rolls - 2
  • Chorizo (lean) - 150 grams
  • Potatoes (peeled and diced) - 200 grams
  • Tomato sauce - 200 ml
  • Guajillo chili (dried) - 2
  • Garlic cloves - 2
  • Onion (finely chopped) - 1 small
  • Cilantro (chopped) - 2 tablespoons
  • Lettuce (shredded) - 1 cup
  • Avocado (sliced) - 1 small
  • Lime wedges - 2
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Soak the guajillo chilies in hot water for about 10 minutes until soft, then blend with garlic and a pinch of salt to make a smooth sauce.
  2. In a pot, boil diced potatoes in salted water until tender, about 10 minutes, then drain and set aside.
  3. In a skillet, cook the chopped onion until translucent, then add the chorizo and cook until browned and thoroughly cooked.
  4. Add the boiled potatoes to the skillet with the chorizo, mixing well to combine, and cook for an additional 2-3 minutes.
  5. Dip each bolillo roll in the chili sauce until well coated, then fill them with the chorizo and potato mixture.
  6. Heat a non-stick skillet over medium heat and toast the filled bolillos on both sides for about 2 minutes each until golden brown.
  7. Serve the pambazos topped with shredded lettuce, avocado slices, and cilantro, with lime wedges on the side.
