Ingredients
- Potatoes - 300 grams, peeled and diced
- Chorizo (vegetarian) - 100 grams, crumbled
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Green bell pepper - 1/2, finely chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Mexican crema - 4 tablespoons
- Queso fresco - 50 grams, crumbled
- Bolillo rolls - 2
- Guajillo chiles - 3, seeds removed and soaked in hot water
- Vegetable broth - 1/2 cup
- Oil - 2 tablespoons for frying
Steps
- In a pot, boil the diced potatoes in salted water until fork-tender, about 15 minutes. Drain and set aside.
- In a skillet, heat 1 tablespoon of oil over medium heat. Add the chopped onion, garlic, and green bell pepper, sautéing until softened, about 5 minutes.
- Add the crumbled vegetarian chorizo to the skillet, cooking until browned, about 5 more minutes.
- In a bowl, mash the boiled potatoes and mix them with the chorizo mixture. Season with salt, black pepper, and cumin. Remove from heat.
- In a blender, combine the soaked guajillo chiles and vegetable broth, blending until smooth to create the dipping sauce.
- Heat the remaining tablespoon of oil in the skillet. Dip each bolillo roll into the guajillo sauce, ensuring they are well coated, then place them in the skillet to toast on each side until golden brown, about 3-4 minutes per side.
- Once toasted, fill the bolillo rolls with the potato and chorizo mixture, then drizzle with Mexican crema and sprinkle with queso fresco.
