Ingredients

  • Kosher chorizo - 200 grams
  • Bolillo rolls - 2 pieces
  • Tomato - 1 medium, chopped
  • Onion - 1/2 medium, chopped
  • Garlic - 2 cloves, minced
  • Chili powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Water - 1/2 cup
  • Avocado - 1, sliced (for topping)
  • Cotija cheese - 50 grams, crumbled (for topping)

Steps

  1. In a skillet, heat 1 tablespoon of vegetable oil over medium heat and add the chopped onion and garlic. Sauté until translucent, about 3-4 minutes.
  2. Add the kosher chorizo to the skillet, breaking it apart with a spoon. Cook until browned and fully cooked, about 5-7 minutes.
  3. Stir in the chopped tomato, chili powder, paprika, and salt. Cook for another 3-4 minutes until the tomatoes soften. Remove from heat and set aside.
  4. In a separate bowl, mix the water with any remaining tomato juice and season with salt. Dip each bolillo roll in the mixture briefly to soak without becoming too soggy.
  5. In the same skillet, add the remaining tablespoon of oil and heat over medium-high heat. Add the soaked bolillo rolls and fry until golden brown on both sides, about 2-3 minutes per side.
  6. Stuff each fried bolillo with the chorizo mixture and top with sliced avocado, crumbled Cotija cheese, and chopped cilantro.
