- Kosher chorizo - 200 grams
- Bolillo rolls - 2 pieces
- Tomato - 1 medium, chopped
- Onion - 1/2 medium, chopped
- Garlic - 2 cloves, minced
- Chili powder - 1 teaspoon
- Paprika - 1 teaspoon
- Cilantro - 2 tablespoons, chopped
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Water - 1/2 cup
- Avocado - 1, sliced (for topping)
- Cotija cheese - 50 grams, crumbled (for topping)
Steps
- In a skillet, heat 1 tablespoon of vegetable oil over medium heat and add the chopped onion and garlic. Sauté until translucent, about 3-4 minutes.
- Add the kosher chorizo to the skillet, breaking it apart with a spoon. Cook until browned and fully cooked, about 5-7 minutes.
- Stir in the chopped tomato, chili powder, paprika, and salt. Cook for another 3-4 minutes until the tomatoes soften. Remove from heat and set aside.
- In a separate bowl, mix the water with any remaining tomato juice and season with salt. Dip each bolillo roll in the mixture briefly to soak without becoming too soggy.
- In the same skillet, add the remaining tablespoon of oil and heat over medium-high heat. Add the soaked bolillo rolls and fry until golden brown on both sides, about 2-3 minutes per side.
- Stuff each fried bolillo with the chorizo mixture and top with sliced avocado, crumbled Cotija cheese, and chopped cilantro.
