  • Bolillo rolls - 2

  • Cotija cheese - 50 grams, crumbled
  • Lettuce - 1 cup, shredded
  • Avocado - 1 small, sliced
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a skillet, heat olive oil over medium heat and add diced potatoes. Cook until golden and tender, about 10 minutes. Season with salt and pepper.
  2. Add chorizo to the skillet with the potatoes and cook until browned and fully cooked, about 5-7 minutes.
  3. In a separate bowl, whisk the eggs and pour them into the skillet, stirring gently until scrambled and fully cooked.
  4. While the eggs are cooking, heat the salsa roja in a small saucepan until warm.
  5. Slice the bolillo rolls in half and lightly toast them on a skillet or griddle until golden brown.
  6. Spread a layer of refried beans on the bottom half of each bolillo roll.
  7. Spoon the chorizo and egg mixture over the beans, then drizzle with warm salsa roja.
  8. Top with crumbled Cotija cheese and shredded lettuce, then place the top half of the bolillo roll on each sandwich.
  9. Serve the pambazos with sliced avocado on the side.
