- Lettuce - 1 cup, shredded

Steps
- In a skillet, heat olive oil over medium heat and add diced potatoes. Cook until golden and tender, about 10 minutes. Season with salt and pepper.

- Top with crumbled Cotija cheese and shredded lettuce, then place the top half of the bolillo roll on each sandwich.
- Serve the pambazos with sliced avocado on the side.
