Steps
- Preheat your oven to 180°C (350°F) and spread the raw peanuts on a baking sheet. Roast them for about 10 minutes or until they are golden and fragrant.
- In a saucepan, combine the brown sugar, water, and salt over medium heat. Stir until the sugar dissolves completely, then bring it to a gentle boil.
- Once the mixture starts boiling, let it cook without stirring for about 5-7 minutes until it reaches a soft ball stage (about 115°C or 240°F). You can test this by dropping a small amount into cold water; it should form a soft ball.
- Remove the saucepan from heat and quickly stir in the roasted peanuts and vanilla extract until they are well coated with the caramel mixture.
- Pour the mixture onto a parchment-lined baking tray and spread it out evenly. Use a spatula to press it down firmly.
- Let it cool completely at room temperature for about 15-20 minutes. Once cooled, cut into bars or squares and serve.
