Steps

  1. Preheat your oven to 180°C (350°F) and spread the raw peanuts on a baking sheet. Roast them for about 10 minutes or until they are golden and fragrant.
  2. In a saucepan, combine the brown sugar, water, and salt over medium heat. Stir until the sugar dissolves completely, then bring it to a gentle boil.
  3. Once the mixture starts boiling, let it cook without stirring for about 5-7 minutes until it reaches a soft ball stage (about 115°C or 240°F). You can test this by dropping a small amount into cold water; it should form a soft ball.
  4. Remove the saucepan from heat and quickly stir in the roasted peanuts and vanilla extract until they are well coated with the caramel mixture.
  5. Pour the mixture onto a parchment-lined baking tray and spread it out evenly. Use a spatula to press it down firmly.
  6. Let it cool completely at room temperature for about 15-20 minutes. Once cooled, cut into bars or squares and serve.
