- Pumpkin seeds - 100 grams
- Sesame seeds - 50 grams
- Almonds - 50 grams
- Brown sugar - 75 grams
- Water - 60 ml
- Vanilla extract - 1 teaspoon
- Cinnamon powder - 1/2 teaspoon
- Salt - a pinch
Steps
- Preheat your oven to 180°C (350°F). Spread the pumpkin seeds, sesame seeds, and almonds on a baking sheet and toast them in the oven for about 10-12 minutes until golden and fragrant.
- In a saucepan, combine the brown sugar, water, vanilla extract, cinnamon powder, and a pinch of salt. Heat over medium heat, stirring until the sugar dissolves and the mixture begins to bubble.
- Once the syrup reaches a soft-ball stage (about 115°C or 240°F), remove it from heat. Quickly stir in the toasted seeds and nuts until they are well coated.
- Line a baking dish or tray with parchment paper and pour the mixture into it. Use a spatula to spread it evenly and press it down firmly.
- Let the palanquetas cool for about 15-20 minutes before cutting them into squares or bars. Allow them to cool completely before serving.
