Ingredients

  • Large eggs - 4
  • Cheddar cheese, shredded - 100g
  • Queso Fresco, crumbled - 50g
  • Fresh cilantro, chopped - 2 tablespoons
  • Fresh jalapeño, diced - 1 small (optional)
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Butter or olive oil - 1 tablespoon

Steps

  1. In a bowl, whisk together the eggs, salt, and black pepper until well combined.
  2. Heat the butter or olive oil in a non-stick skillet over medium heat.
  3. Pour the egg mixture into the skillet, tilting the pan to ensure even coverage.
  4. As the eggs begin to set, gently lift the edges with a spatula, allowing uncooked egg to flow to the edges.
  5. Once the eggs are mostly set but still slightly runny on top, sprinkle the shredded cheddar cheese, crumbled queso fresco, chopped cilantro, and diced jalapeño (if using) evenly over one half of the omelette.
  6. Carefully fold the other half of the omelette over the cheese and herbs, and cook for an additional 1-2 minutes until the cheese melts and the eggs are fully cooked.
  7. Slide the omelette onto a plate, cut in half, and serve immediately.
