Ingredients

  • Eggs - 4 large
  • Fresh spinach - 100 grams
  • Onion - 50 grams, finely chopped
  • Garlic - 1 clove, minced
  • Olive oil - 1 tablespoon
  • Cotija cheese - 30 grams, crumbled
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish (optional)

Steps

  1. Heat the olive oil in a non-stick skillet over medium heat.
  2. Add the chopped onion and minced garlic to the skillet, sautéing until the onion becomes translucent, about 2-3 minutes.
  3. Add the fresh spinach to the skillet, stirring until wilted, about 2 minutes. Season with salt and black pepper to taste.
  4. In a bowl, whisk together the eggs until well combined. Pour the eggs over the spinach mixture in the skillet.
  5. Cook the omelette on medium heat without stirring for about 3-4 minutes, or until the edges start to set.
  6. Sprinkle the crumbled Cotija cheese over one half of the omelette, then fold the other half over the cheese.
  7. Cover the skillet and cook for an additional 2-3 minutes, or until the cheese melts and the eggs are fully cooked.
  8. Slide the omelette onto a plate, garnish with fresh cilantro if desired, and serve immediately.
