Ingredients

  • Fresh lime juice - 60 ml
  • Lime zest - 1 teaspoon
  • Erythritol (or preferred low-carb sweetener) - 30 grams
  • Water - 240 ml
  • Pinch of salt - 1

Steps

  1. In a small saucepan, combine the water, erythritol, and a pinch of salt. Heat over medium heat, stirring until the erythritol dissolves completely.
  2. Remove the saucepan from heat and let the mixture cool slightly.
  3. Once cooled, add the fresh lime juice and lime zest to the mixture. Stir well to combine.
  4. Pour the mixture into a shallow dish or a freezer-safe container.
  5. Place the dish in the freezer and freeze for about 2 hours, or until the mixture is firm but not completely solid.
  6. Using a fork, scrape the frozen mixture to create a fluffy texture. Return it to the freezer for another hour.
  7. Serve the Nieve de Limón in small bowls, garnished with additional lime zest if desired.
