Steps
- In a small saucepan, combine the water, erythritol, and a pinch of salt. Heat over medium heat, stirring until the erythritol dissolves completely.
- Remove the saucepan from heat and let the mixture cool slightly.
- Once cooled, add the fresh lime juice and lime zest to the mixture. Stir well to combine.
- Pour the mixture into a shallow dish or a freezer-safe container.
- Place the dish in the freezer and freeze for about 2 hours, or until the mixture is firm but not completely solid.
- Using a fork, scrape the frozen mixture to create a fluffy texture. Return it to the freezer for another hour.
