Ingredients

  • Fresh fruit juice (lime, orange, or tamarind) - 240 ml
  • Granulated sugar - 100 g
  • Water - 240 ml
  • Salt - 1/4 tsp
  • Chopped fresh fruit (optional for serving) - 50 g

Steps

  1. In a medium saucepan, combine the water, sugar, and salt over medium heat. Stir until the sugar is completely dissolved.
  2. Remove the saucepan from heat and let the syrup cool to room temperature.
  3. Once the syrup is cool, add the fresh fruit juice of your choice and mix well.
  4. Pour the mixture into a shallow dish and place it in the freezer.
  5. Every 30 minutes, use a fork to scrape the mixture and break up any ice crystals. Repeat this process until the mixture is fully frozen and fluffy, about 3 hours.
  6. Once ready, scoop the Nieve de Garrafa into bowls and serve immediately, optionally topped with chopped fresh fruit.
