Ingredients

  • Milk - 500 ml
  • Sugar - 75 g
  • Cornstarch - 30 g
  • Vanilla extract - 1 tsp
  • Egg yolks - 2
  • Cinnamon stick - 1
  • Salt - a pinch

Steps

  1. In a saucepan, combine the milk, sugar, and a pinch of salt. Add the cinnamon stick and heat over medium heat until just simmering, stirring occasionally.
  2. In a separate bowl, mix the cornstarch with a small amount of cold milk (about 50 ml) to create a slurry.
  3. Once the milk mixture is simmering, remove the cinnamon stick and whisk in the cornstarch slurry.
  4. Continue to cook the mixture over medium heat, stirring constantly, until it thickens, about 5-7 minutes.
  5. In a small bowl, whisk the egg yolks. Gradually add a few spoonfuls of the hot milk mixture into the egg yolks to temper them, then slowly whisk the yolk mixture back into the saucepan.
  6. Cook for an additional 2-3 minutes, stirring continuously until fully thickened. Remove from heat and stir in the vanilla extract.
  7. Pour the natilla into serving dishes and let it cool to room temperature before refrigerating for at least 2 hours.
  8. Serve chilled, optionally garnished with a sprinkle of cinnamon or a few fresh berries.
