- Milk - 500 ml
- Sugar - 75 g
- Cornstarch - 30 g
- Vanilla extract - 1 tsp
- Egg yolks - 2
- Cinnamon stick - 1
- Salt - a pinch
Steps
- In a saucepan, combine the milk, sugar, and a pinch of salt. Add the cinnamon stick and heat over medium heat until just simmering, stirring occasionally.
- In a separate bowl, mix the cornstarch with a small amount of cold milk (about 50 ml) to create a slurry.
- Once the milk mixture is simmering, remove the cinnamon stick and whisk in the cornstarch slurry.
- Continue to cook the mixture over medium heat, stirring constantly, until it thickens, about 5-7 minutes.
- In a small bowl, whisk the egg yolks. Gradually add a few spoonfuls of the hot milk mixture into the egg yolks to temper them, then slowly whisk the yolk mixture back into the saucepan.
- Cook for an additional 2-3 minutes, stirring continuously until fully thickened. Remove from heat and stir in the vanilla extract.
- Pour the natilla into serving dishes and let it cool to room temperature before refrigerating for at least 2 hours.
- Serve chilled, optionally garnished with a sprinkle of cinnamon or a few fresh berries.
