- Salt - a pinch
- Toasted coconut flakes - 2 tbsp (for garnish)
Steps
- In a small saucepan, combine the coconut milk, sugar, and a pinch of salt. Heat over medium heat until the sugar dissolves and the mixture is warm, but do not let it boil.
- In a separate bowl, mix the cornstarch with a few tablespoons of cold water to create a slurry.
- Once the coconut milk mixture is warm, slowly pour in the cornstarch slurry while whisking continuously to avoid lumps.
- Continue to cook the mixture over medium heat, stirring constantly, until it thickens and begins to bubble slightly (about 5-7 minutes).
- Remove the saucepan from the heat and stir in the vanilla extract.
- Pour the natilla into serving dishes and let it cool to room temperature, then refrigerate for at least 1 hour until set.
- Before serving, garnish with toasted coconut flakes.
