Ingredients

  • Cornstarch - 30 g
  • Vanilla extract - 1 tsp
  • Salt - a pinch
  • Toasted coconut flakes - 2 tbsp (for garnish)

Steps

  1. In a small saucepan, combine the coconut milk, sugar, and a pinch of salt. Heat over medium heat until the sugar dissolves and the mixture is warm, but do not let it boil.
  2. In a separate bowl, mix the cornstarch with a few tablespoons of cold water to create a slurry.
  3. Once the coconut milk mixture is warm, slowly pour in the cornstarch slurry while whisking continuously to avoid lumps.
  4. Continue to cook the mixture over medium heat, stirring constantly, until it thickens and begins to bubble slightly (about 5-7 minutes).
  5. Remove the saucepan from the heat and stir in the vanilla extract.
  6. Pour the natilla into serving dishes and let it cool to room temperature, then refrigerate for at least 1 hour until set.
  7. Before serving, garnish with toasted coconut flakes.
