- Monterey Jack cheese (shredded) - 50 grams
- Milk - 100 ml
- All-purpose flour - 1 tablespoon
- Butter (kosher) - 1 tablespoon
- Cumin - 1/2 teaspoon
- Chili powder - 1/2 teaspoon
- Garlic powder - 1/4 teaspoon
- Salt - to taste
- Chopped fresh cilantro - for garnish
Steps
- In a medium saucepan, melt the kosher butter over medium heat.
- Add the all-purpose flour and whisk together for about 1 minute until the mixture is lightly golden.
- Gradually pour in the milk while whisking continuously to avoid lumps, and cook until the sauce thickens, about 2-3 minutes.
- Stir in the shredded cheddar and Monterey Jack cheeses, cumin, chili powder, garlic powder, and salt. Continue to stir until the cheese is completely melted and the sauce is smooth.
- While the cheese sauce is cooking, preheat your oven to 180°C (350°F).
- Arrange the tortilla chips on a baking sheet and drizzle half of the cheese sauce over them.
- Place the baking sheet in the oven and bake for about 5 minutes until the chips are slightly warm and crispy.
- Remove from the oven and drizzle the remaining cheese sauce over the chips.
- Garnish with chopped fresh cilantro before serving.
