Ingredients

  • Tortilla chips - 150 grams
  • Cheddar cheese (shredded) - 100 grams
  • Monterey Jack cheese (shredded) - 50 grams
  • Milk - 100 ml
  • All-purpose flour - 1 tablespoon
  • Butter (kosher) - 1 tablespoon
  • Cumin - 1/2 teaspoon
  • Chili powder - 1/2 teaspoon
  • Garlic powder - 1/4 teaspoon
  • Salt - to taste
  • Chopped fresh cilantro - for garnish

Steps

  1. In a medium saucepan, melt the kosher butter over medium heat.
  2. Add the all-purpose flour and whisk together for about 1 minute until the mixture is lightly golden.
  3. Gradually pour in the milk while whisking continuously to avoid lumps, and cook until the sauce thickens, about 2-3 minutes.
  4. Stir in the shredded cheddar and Monterey Jack cheeses, cumin, chili powder, garlic powder, and salt. Continue to stir until the cheese is completely melted and the sauce is smooth.
  5. While the cheese sauce is cooking, preheat your oven to 180°C (350°F).
  6. Arrange the tortilla chips on a baking sheet and drizzle half of the cheese sauce over them.
  7. Place the baking sheet in the oven and bake for about 5 minutes until the chips are slightly warm and crispy.
  8. Remove from the oven and drizzle the remaining cheese sauce over the chips.
  9. Garnish with chopped fresh cilantro before serving.
