  • Ground cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon

  • Black pepper - 1/4 teaspoon
  • Tomato sauce - 100 grams
  • Nutritional yeast - 2 tablespoons
  • Fresh cilantro (chopped) - for garnish
  • Avocado (sliced) - 1/2

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced mushrooms and cook for about 5 minutes until they start to soften.
  3. Add the diced red bell pepper, sliced red onion, minced garlic, ground cumin, smoked paprika, salt, and black pepper to the skillet. Sauté for an additional 5-7 minutes until the vegetables are tender.
  4. While the vegetables are cooking, brush the corn tortillas with the remaining olive oil on both sides. Place them on a baking sheet and bake in the preheated oven for about 5-7 minutes until they are crispy.
  5. Spread the tomato sauce evenly over the baked tortillas, followed by the sautéed vegetable mix. Sprinkle nutritional yeast over the top for a cheesy flavor.
  6. Return the assembled tostada pizzas to the oven and bake for another 5-7 minutes to heat through.
