Ingredients
- Mushrooms (sliced) - 200 grams
- Shredded cheese (cheddar or mozzarella) - 100 grams
- Low-carb tortillas - 2 pieces
- Olive oil - 1 tablespoon
- Garlic (minced) - 2 cloves
- Onion (finely chopped) - 50 grams
- Cumin powder - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro (chopped) - 2 tablespoons
- Sour cream (for serving) - 2 tablespoons (optional)
Steps
- Heat the olive oil in a skillet over medium heat.
- Add the chopped onions and minced garlic, sautéing until the onions are translucent (about 3-4 minutes).
- Stir in the sliced mushrooms, cumin, salt, and pepper, cooking until the mushrooms are soft and browned (about 5-7 minutes).
- Remove the mushroom mixture from the skillet and set aside.
- In the same skillet, place one low-carb tortilla and sprinkle half of the shredded cheese on one half of the tortilla.
- Add half of the mushroom mixture on top of the cheese and sprinkle with some chopped cilantro.
- Fold the tortilla over to cover the filling and cook until the cheese is melted and the tortilla is golden brown (about 2-3 minutes per side).
- Repeat the process with the second tortilla.
- Cut the quesadillas into wedges and serve warm with sour cream if desired.
