Steps
- Preheat the oven to 220°C (428°F).
- Rice the cauliflower in a food processor until it resembles fine grains.
- In a microwave-safe bowl, steam the riced cauliflower for 5 minutes until soft, then let cool.
- Once cooled, squeeze out excess moisture using a clean kitchen towel.
- Combine the riced cauliflower with half of the cheddar cheese, half of the mozzarella cheese, and salt in a bowl, mixing well.
- Spread the mixture onto a baking sheet lined with parchment paper to form a pizza crust, about 1/2 inch thick.
- Bake the crust in the preheated oven for 15-20 minutes until golden and crispy.
- While the crust is baking, heat olive oil in a skillet over medium heat, then add minced garlic and sliced mushrooms, sautéing until mushrooms are tender.
- Stir in cumin, chili powder, salt, and pepper; cook for an additional 2 minutes.
- Remove the crust from the oven, top with the sautéed mushrooms, remaining cheddar and mozzarella cheese, and sprinkle with chopped cilantro.
- Return the pizza to the oven and bake for an additional 5-7 minutes until the cheese is melted and bubbly.
- Let cool for a few minutes, slice, and serve with sour cream if desired.
