Ingredients

  • Cauliflower - 250 grams (riced)
  • Cheddar cheese - 100 grams (shredded)
  • Mozzarella cheese - 100 grams (shredded)
  • Mushrooms - 150 grams (sliced)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves (minced)
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons (chopped)
  • Sour cream - for serving (optional)

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Rice the cauliflower in a food processor until it resembles fine grains.
  3. In a microwave-safe bowl, steam the riced cauliflower for 5 minutes until soft, then let cool.
  4. Once cooled, squeeze out excess moisture using a clean kitchen towel.
  5. Combine the riced cauliflower with half of the cheddar cheese, half of the mozzarella cheese, and salt in a bowl, mixing well.
  6. Spread the mixture onto a baking sheet lined with parchment paper to form a pizza crust, about 1/2 inch thick.
  7. Bake the crust in the preheated oven for 15-20 minutes until golden and crispy.
  8. While the crust is baking, heat olive oil in a skillet over medium heat, then add minced garlic and sliced mushrooms, sautéing until mushrooms are tender.
  9. Stir in cumin, chili powder, salt, and pepper; cook for an additional 2 minutes.
  10. Remove the crust from the oven, top with the sautéed mushrooms, remaining cheddar and mozzarella cheese, and sprinkle with chopped cilantro.
  11. Return the pizza to the oven and bake for an additional 5-7 minutes until the cheese is melted and bubbly.
