Ingredients

  • Bolillo rolls - 2
  • Canned black beans - 1 cup (240g)
  • Garlic powder - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Vegan cheese shreds - 1 cup (100g)
  • Chopped fresh cilantro - 2 tablespoons
  • Sliced jalapeños (pickled or fresh) - to taste
  • Avocado - 1 small, sliced

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a saucepan, heat the olive oil over medium heat. Add the drained black beans, garlic powder, cumin, and salt. Cook for about 5-7 minutes, mashing the beans with a fork until they reach a spreadable consistency.
  3. Slice the bolillo rolls in half lengthwise and place them on a baking sheet, cut side up.
  4. Spread the black bean mixture evenly over each half of the bolillo rolls.
  5. Sprinkle the vegan cheese shreds generously over the black bean spread.
  6. Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the cheese is melted and the edges of the bread are crispy.
  7. Remove from the oven and top with chopped cilantro and sliced jalapeños as desired.
  8. Serve hot, accompanied by sliced avocado.
