- Bolillo rolls - 2
- Canned black beans - 1 cup (240g)
- Garlic powder - 1 teaspoon
- Cumin - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Vegan cheese shreds - 1 cup (100g)
- Chopped fresh cilantro - 2 tablespoons
- Sliced jalapeños (pickled or fresh) - to taste
- Avocado - 1 small, sliced
Steps
- Preheat your oven to 180°C (350°F).
- In a saucepan, heat the olive oil over medium heat. Add the drained black beans, garlic powder, cumin, and salt. Cook for about 5-7 minutes, mashing the beans with a fork until they reach a spreadable consistency.
- Slice the bolillo rolls in half lengthwise and place them on a baking sheet, cut side up.
- Spread the black bean mixture evenly over each half of the bolillo rolls.
- Sprinkle the vegan cheese shreds generously over the black bean spread.
- Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the cheese is melted and the edges of the bread are crispy.
- Remove from the oven and top with chopped cilantro and sliced jalapeños as desired.
- Serve hot, accompanied by sliced avocado.
