  • Tomatoes - 2 medium, diced
  • Red onion - 1/4 cup, finely chopped
  • Cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Garlic powder - 1/2 teaspoon
  • Jalapeño - 1 small, diced (optional)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, egg, baking soda, and salt until a dough forms.
  3. Divide the dough into two equal portions and shape each into a flat oval or rectangle, about 1/2 inch thick.
  4. Place the shaped dough on a parchment-lined baking sheet and bake for 15 minutes until lightly golden.
  5. While the dough is baking, prepare the salsa by mixing diced tomatoes, red onion, cilantro, lime juice, garlic powder, and jalapeño in a bowl. Set aside.
