  • Pepper - to taste
  • Shredded kosher cheese (such as mozzarella or cheddar) - 1 cup (100 g)
  • Fresh cilantro (chopped) - 2 tablespoons
  • Avocado (sliced) - 1 small (for serving)
  • Salsa (optional) - for serving

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a small saucepan, heat olive oil over medium heat, then add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the drained black beans, cumin, salt, and pepper to the saucepan. Cook for 5-7 minutes, mashing the beans slightly with a fork until warmed through and creamy.
  4. While the beans are cooking, cut the bolillo rolls in half lengthwise and place them on a baking sheet, cut side up.
  5. Evenly distribute the refried bean mixture over the cut sides of the bolillo rolls.
  6. Sprinkle the shredded kosher cheese on top of the beans.
  7. Bake in the preheated oven for about 10 minutes, or until the cheese is melted and bubbly.
