- Fresh cilantro (chopped) - 2 tablespoons
- Avocado (sliced) - 1 small (for serving)

Steps
- Preheat the oven to 200°C (400°F).
- In a small saucepan, heat olive oil over medium heat, then add minced garlic and sauté for about 1 minute until fragrant.
- Add the drained black beans, cumin, salt, and pepper to the saucepan. Cook for 5-7 minutes, mashing the beans slightly with a fork until warmed through and creamy.
- While the beans are cooking, cut the bolillo rolls in half lengthwise and place them on a baking sheet, cut side up.
- Evenly distribute the refried bean mixture over the cut sides of the bolillo rolls.
- Sprinkle the shredded kosher cheese on top of the beans.
- Bake in the preheated oven for about 10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with chopped cilantro and serve with sliced avocado and salsa if desired.
