- Bolillo bread - 2
- Refried black beans - 1 cup
- Shredded cheese (Oaxacan or mozzarella) - 1 cup
- Pico de gallo - 1/2 cup
- Avocado - 1 small, sliced
- Olive oil - 1 tablespoon
- Salt - to taste
- Ground black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- Slice the bolillo bread in half lengthwise and place them on a baking sheet.
- Spread the refried black beans evenly over each half of the bolillo bread.
- Sprinkle the shredded cheese generously on top of the beans.
- Drizzle a little olive oil over the cheese and season with salt and pepper.
- Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
