Ingredients

  • Bolillo bread - 2
  • Refried black beans - 1 cup
  • Shredded cheese (Oaxacan or mozzarella) - 1 cup
  • Pico de gallo - 1/2 cup
  • Avocado - 1 small, sliced
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Ground black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the bolillo bread in half lengthwise and place them on a baking sheet.
  3. Spread the refried black beans evenly over each half of the bolillo bread.
  4. Sprinkle the shredded cheese generously on top of the beans.
  5. Drizzle a little olive oil over the cheese and season with salt and pepper.
  6. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and top with pico de gallo and avocado slices.
  8. Garnish with fresh cilantro and serve immediately.
