- Canned tomatoes - 200 grams, crushed
- Almond butter - 2 tablespoons
- Cocoa powder - 1 tablespoon
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Oregano - 1 teaspoon
- Chicken or vegetable broth - 100 ml
- Salt - to taste
- Pepper - to taste
- Fresh cilantro - for garnish
Steps
- Spiralize the zucchini using a spiralizer or a vegetable peeler to create noodles, then set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and diced red onion; sauté until the onion becomes translucent, about 5 minutes.
- Stir in the crushed tomatoes, almond butter, cocoa powder, cumin, cinnamon, oregano, and broth. Mix well, and let the sauce simmer for 10 minutes, stirring occasionally.
- Season the sauce with salt and pepper to taste.
- Add the zucchini noodles to the skillet, tossing to coat them in the mole sauce. Cook for an additional 5 minutes until the noodles are tender but still firm.
