Ingredients

  • Zucchini - 2 medium-sized

  • Canned tomatoes - 200 grams, crushed
  • Almond butter - 2 tablespoons
  • Cocoa powder - 1 tablespoon
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Oregano - 1 teaspoon
  • Chicken or vegetable broth - 100 ml
  • Salt - to taste
  • Pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Spiralize the zucchini using a spiralizer or a vegetable peeler to create noodles, then set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and diced red onion; sauté until the onion becomes translucent, about 5 minutes.
  3. Stir in the crushed tomatoes, almond butter, cocoa powder, cumin, cinnamon, oregano, and broth. Mix well, and let the sauce simmer for 10 minutes, stirring occasionally.
  4. Season the sauce with salt and pepper to taste.
  5. Add the zucchini noodles to the skillet, tossing to coat them in the mole sauce. Cook for an additional 5 minutes until the noodles are tender but still firm.
