Ingredients

  • Fresh cilantro - 50 grams
  • Fresh parsley - 30 grams
  • Fresh epazote - 15 grams
  • Green tomatoes - 200 grams
  • Jalapeño pepper - 1 medium
  • Garlic - 2 cloves
  • Onion - 1 small
  • Pumpkin seeds (pepitas) - 30 grams
  • Olive oil - 2 tablespoons
  • Vegetable broth - 250 ml
  • Salt - to taste
  • Black pepper - to taste
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, sliced
  • Corn tortillas - 4 pieces

Steps

  1. In a dry skillet, toast the pumpkin seeds over medium heat until golden brown, about 3-4 minutes. Remove from heat and set aside.
  2. In the same skillet, add olive oil and sauté diced onion and minced garlic until translucent, about 5 minutes.
  3. Add the green tomatoes, jalapeño pepper, and the toasted pumpkin seeds to the skillet. Cook for another 5 minutes until the tomatoes soften.
  4. Transfer the mixture to a blender or food processor, add cilantro, parsley, epazote, and vegetable broth. Blend until smooth and season with salt and black pepper to taste.
  5. In a separate pan, heat a bit of olive oil and sauté the sliced zucchini and bell pepper until tender, about 5-7 minutes.
  6. Pour the mole verde sauce over the sautéed vegetables and simmer for an additional 5 minutes to allow the flavors to meld.
  7. Warm the corn tortillas on a grill or skillet for a few seconds on each side until pliable.
  8. Serve the mole verde over the warm tortillas, garnished with extra herbs or pumpkin seeds if desired.
