- Fresh parsley - 30 grams
- Fresh epazote - 15 grams
- Green tomatoes - 200 grams
- Jalapeño pepper - 1 medium
- Garlic - 2 cloves
- Onion - 1 small
- Pumpkin seeds (pepitas) - 30 grams
- Olive oil - 2 tablespoons
- Vegetable broth - 250 ml
- Salt - to taste
- Black pepper - to taste
- Zucchini - 1 medium, sliced
- Bell pepper - 1 medium, sliced
- Corn tortillas - 4 pieces
Steps
- In a dry skillet, toast the pumpkin seeds over medium heat until golden brown, about 3-4 minutes. Remove from heat and set aside.
- In the same skillet, add olive oil and sauté diced onion and minced garlic until translucent, about 5 minutes.
- Add the green tomatoes, jalapeño pepper, and the toasted pumpkin seeds to the skillet. Cook for another 5 minutes until the tomatoes soften.
- Transfer the mixture to a blender or food processor, add cilantro, parsley, epazote, and vegetable broth. Blend until smooth and season with salt and black pepper to taste.
- In a separate pan, heat a bit of olive oil and sauté the sliced zucchini and bell pepper until tender, about 5-7 minutes.
- Pour the mole verde sauce over the sautéed vegetables and simmer for an additional 5 minutes to allow the flavors to meld.
- Warm the corn tortillas on a grill or skillet for a few seconds on each side until pliable.
- Serve the mole verde over the warm tortillas, garnished with extra herbs or pumpkin seeds if desired.
