Ingredients
- Tofu - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- White onion - 1 medium, chopped
- Tomatillos - 200 grams, husked and quartered
- Green chili (such as jalapeño) - 1, chopped
- Cilantro - 1/2 cup, chopped
- Pumpkin seeds (pepitas) - 1/4 cup, toasted
- Vegetable broth - 1 cup
- Lime juice - 2 tablespoons
- Salt - to taste
- Pepper - to taste
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut it into cubes.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the tofu cubes and cook until golden brown on all sides, about 10 minutes. Remove from the skillet and set aside.
- In the same skillet, add another tablespoon of olive oil, then add the minced garlic and chopped onion. Sauté until the onion is translucent, about 5 minutes.
- Add the tomatillos and green chili to the skillet, cooking for an additional 5 minutes until they soften.
- Transfer the cooked vegetables to a blender or food processor. Add the cilantro, toasted pumpkin seeds, vegetable broth, lime juice, and season with salt and pepper. Blend until smooth.
- Return the mole sauce to the skillet and bring to a simmer. Add the crispy tofu back into the skillet, coating it well with the mole sauce. Cook for an additional 5 minutes to heat through.
- Serve warm, garnished with extra cilantro and lime wedges if desired.
