Ingredients

  • Tofu - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • White onion - 1 medium, chopped
  • Tomatillos - 200 grams, husked and quartered
  • Green chili (such as jalapeño) - 1, chopped
  • Cilantro - 1/2 cup, chopped
  • Pumpkin seeds (pepitas) - 1/4 cup, toasted
  • Vegetable broth - 1 cup
  • Lime juice - 2 tablespoons
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into cubes.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the tofu cubes and cook until golden brown on all sides, about 10 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add another tablespoon of olive oil, then add the minced garlic and chopped onion. Sauté until the onion is translucent, about 5 minutes.
  4. Add the tomatillos and green chili to the skillet, cooking for an additional 5 minutes until they soften.
  5. Transfer the cooked vegetables to a blender or food processor. Add the cilantro, toasted pumpkin seeds, vegetable broth, lime juice, and season with salt and pepper. Blend until smooth.
  6. Return the mole sauce to the skillet and bring to a simmer. Add the crispy tofu back into the skillet, coating it well with the mole sauce. Cook for an additional 5 minutes to heat through.
  7. Serve warm, garnished with extra cilantro and lime wedges if desired.
