Ingredients

  • Zucchini - 2 medium, spiralized
  • Chicken breast - 200 grams, diced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Tomato paste - 2 tablespoons
  • Almond butter - 1 tablespoon
  • Chicken broth - 1 cup
  • Dried ancho chili - 1, soaked and blended
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Lime juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant and translucent, about 3-4 minutes.
  2. Add the diced chicken breast to the skillet, cooking until browned and cooked through, about 5-7 minutes. Season with salt and black pepper.
  3. In a blender, combine the soaked ancho chili, tomato paste, almond butter, chicken broth, cumin, oregano, and lime juice. Blend until smooth to create the mole rojo sauce.
  4. Pour the mole sauce into the skillet with the cooked chicken, stirring to combine. Let it simmer for about 5-7 minutes until the sauce thickens slightly.
  5. Meanwhile, spiralize the zucchini into fettuccine-like noodles. You can also lightly sauté the zucchini noodles in a separate pan for 2-3 minutes if you prefer them softer.
  6. To serve, divide the zucchini noodles between two plates and top with the mole rojo chicken mixture. Garnish with fresh cilantro.
