Ingredients
- Chicken thighs - 400 grams
- Dried ancho chiles - 2
- Dried guajillo chiles - 2
- Tomato - 1 large, chopped
- Garlic - 3 cloves, minced
- Onion - 1 small, diced
- Almonds - 30 grams
- Sesame seeds - 1 tablespoon
- Cinnamon stick - 1 small
- Cumin seeds - 1 teaspoon
- Olive oil - 2 tablespoons
- Vegetable broth - 250 ml
- Salt - to taste
- Black pepper - to taste
- Lime - 1, juiced
Steps
- Remove the stems and seeds from the dried ancho and guajillo chiles. Toast them in a dry skillet over medium heat for about 2-3 minutes until fragrant, then soak them in hot water for 15 minutes.
- In the same skillet, add the olive oil and sauté the diced onion and minced garlic until translucent, about 5-7 minutes.
- Add the chopped tomato, toasted almonds, sesame seeds, cinnamon stick, and cumin seeds to the skillet. Cook for another 5 minutes until the tomatoes are soft.
- Drain the chiles and add them to the skillet. Pour in the vegetable broth and season with salt and black pepper. Simmer for 15 minutes to allow flavors to meld.
- Remove the cinnamon stick and blend the mixture into a smooth sauce using a blender or immersion blender. Adjust seasoning if necessary.
- Grill the chicken thighs over medium heat for about 6-7 minutes on each side or until fully cooked. Brush the mole rojo sauce onto the chicken during the last few minutes of grilling.
- Serve the grilled chicken with additional mole rojo sauce and a squeeze of fresh lime juice on top.
