Ingredients

  • Chicken thighs - 500 grams
  • Salt - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Tomato - 1 medium, chopped
  • Dried ancho chilies - 2, seeds removed
  • Dried pasilla chilies - 2, seeds removed
  • Dried mulato chilies - 2, seeds removed
  • Chicken broth - 500 milliliters
  • Almonds - 30 grams, toasted
  • Sesame seeds - 1 tablespoon, toasted
  • Cinnamon - 1/2 teaspoon
  • Oregano - 1 teaspoon
  • Cocoa powder - 1 tablespoon
  • Sugar - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Bay leaves - 2
  • Dark chocolate (70% cacao) - 20 grams

Steps

  1. Season the chicken thighs with salt and set aside.
  2. In a large skillet, heat vegetable oil over medium heat and brown the chicken on all sides, about 5-7 minutes total. Remove the chicken and set aside.
  3. In the same skillet, add onions and garlic, cooking until softened, about 3-4 minutes.
  4. Add the chopped tomato and cook for an additional 2 minutes until softened.
  5. In a separate pot, soak the dried chilies in hot water for about 15 minutes until softened. Drain and add to the skillet with the onion mixture.
  6. Pour in the chicken broth and bring to a simmer, then add the toasted almonds, sesame seeds, cinnamon, oregano, cocoa powder, sugar, black pepper, and bay leaves.
  7. Blend the sauce using an immersion blender or in a regular blender until smooth.
  8. Return the blended sauce to the skillet, add the chicken thighs back into the pan, and simmer for 30-40 minutes until the chicken is cooked through and tender.
  9. Stir in the dark chocolate until melted and well combined. Adjust seasoning if necessary.
  10. Serve hot, garnished with additional sesame seeds if desired.
