- Tomato - 1 medium, chopped
- Dried ancho chilies - 2, seeds removed
- Dried pasilla chilies - 2, seeds removed
- Dried mulato chilies - 2, seeds removed
- Chicken broth - 500 milliliters
- Almonds - 30 grams, toasted
- Sesame seeds - 1 tablespoon, toasted
- Cinnamon - 1/2 teaspoon
- Oregano - 1 teaspoon
- Cocoa powder - 1 tablespoon
- Sugar - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Bay leaves - 2
- Dark chocolate (70% cacao) - 20 grams
Steps
- Season the chicken thighs with salt and set aside.
- In a large skillet, heat vegetable oil over medium heat and brown the chicken on all sides, about 5-7 minutes total. Remove the chicken and set aside.
- In the same skillet, add onions and garlic, cooking until softened, about 3-4 minutes.
- Add the chopped tomato and cook for an additional 2 minutes until softened.
- In a separate pot, soak the dried chilies in hot water for about 15 minutes until softened. Drain and add to the skillet with the onion mixture.
- Pour in the chicken broth and bring to a simmer, then add the toasted almonds, sesame seeds, cinnamon, oregano, cocoa powder, sugar, black pepper, and bay leaves.
- Blend the sauce using an immersion blender or in a regular blender until smooth.
- Return the blended sauce to the skillet, add the chicken thighs back into the pan, and simmer for 30-40 minutes until the chicken is cooked through and tender.
- Stir in the dark chocolate until melted and well combined. Adjust seasoning if necessary.
- Serve hot, garnished with additional sesame seeds if desired.
