- whole wheat pizza dough - 250 grams
- mole sauce - 150 grams
- red onion - 1 small, sliced
- bell pepper - 1 medium, sliced
- zucchini - 1 small, sliced
- corn kernels - 100 grams (fresh or frozen)
- black beans - 100 grams, drained and rinsed
- vegan cheese - 100 grams, shredded
- fresh cilantro - 1/4 cup, chopped
- olive oil - 1 tablespoon
- lime - 1, juiced
- salt - to taste
- pepper - to taste
Steps
- Preheat the oven to 220°C (428°F).
- Roll out the whole wheat pizza dough on a floured surface to your desired thickness and shape.
- Transfer the rolled dough to a pizza stone or baking sheet lined with parchment paper.
- Spread the mole sauce evenly over the pizza dough, leaving a small border for the crust.
- In a bowl, toss the sliced red onion, bell pepper, zucchini, corn, and black beans with olive oil, lime juice, salt, and pepper.
- Distribute the vegetable mixture evenly over the mole sauce on the pizza.
- Sprinkle the shredded vegan cheese over the top of the vegetables.
- Bake the pizza in the preheated oven for 15-20 minutes, or until the crust is golden and the cheese is melted.
- Remove the pizza from the oven and let it cool for a couple of minutes.
- Garnish with fresh cilantro before slicing and serving.
