Ingredients

  • whole wheat pizza dough - 250 grams
  • mole sauce - 150 grams
  • red onion - 1 small, sliced
  • bell pepper - 1 medium, sliced
  • zucchini - 1 small, sliced
  • corn kernels - 100 grams (fresh or frozen)
  • black beans - 100 grams, drained and rinsed
  • vegan cheese - 100 grams, shredded
  • fresh cilantro - 1/4 cup, chopped
  • olive oil - 1 tablespoon
  • lime - 1, juiced
  • salt - to taste
  • pepper - to taste

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the whole wheat pizza dough on a floured surface to your desired thickness and shape.
  3. Transfer the rolled dough to a pizza stone or baking sheet lined with parchment paper.
  4. Spread the mole sauce evenly over the pizza dough, leaving a small border for the crust.
  5. In a bowl, toss the sliced red onion, bell pepper, zucchini, corn, and black beans with olive oil, lime juice, salt, and pepper.
  6. Distribute the vegetable mixture evenly over the mole sauce on the pizza.
  7. Sprinkle the shredded vegan cheese over the top of the vegetables.
  8. Bake the pizza in the preheated oven for 15-20 minutes, or until the crust is golden and the cheese is melted.
  9. Remove the pizza from the oven and let it cool for a couple of minutes.
  10. Garnish with fresh cilantro before slicing and serving.
