- Chicken thighs - 400 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, chopped
- Tomato - 1 medium, chopped
- Almonds - 30 grams, toasted
- Peanut butter - 1 tablespoon
- Cocoa powder - 2 tablespoons
- Chicken broth - 250 ml
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Oregano - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Add the chopped tomato and cook for another 5 minutes until softened.
- In a blender, combine the toasted almonds, peanut butter, cocoa powder, chicken broth, cumin, cinnamon, oregano, chili powder, salt, and black pepper. Blend until smooth.
- Add the chicken thighs to the skillet, browning them on both sides for about 5 minutes.
- Pour the mole sauce over the chicken in the skillet. Reduce heat to low, cover, and let simmer for 25 minutes, or until the chicken is cooked through and tender.
- Serve hot, garnished with fresh cilantro.
