Ingredients

  • Chicken thighs - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, chopped
  • Tomato - 1 medium, chopped
  • Almonds - 30 grams, toasted
  • Peanut butter - 1 tablespoon
  • Cocoa powder - 2 tablespoons
  • Chicken broth - 250 ml
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Oregano - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  2. Add the chopped tomato and cook for another 5 minutes until softened.
  3. In a blender, combine the toasted almonds, peanut butter, cocoa powder, chicken broth, cumin, cinnamon, oregano, chili powder, salt, and black pepper. Blend until smooth.
  4. Add the chicken thighs to the skillet, browning them on both sides for about 5 minutes.
  5. Pour the mole sauce over the chicken in the skillet. Reduce heat to low, cover, and let simmer for 25 minutes, or until the chicken is cooked through and tender.
  6. Serve hot, garnished with fresh cilantro.
