- Beef shank - 300 grams
- Zucchini - 1 medium, diced
- Green beans - 100 grams, trimmed and cut into pieces
- Chayote - 1 medium, diced
- Tomato - 1 medium, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Chicken or beef broth - 500 ml
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - to taste
- Pepper - to taste
- Cilantro - for garnish
Steps
- In a large pot, heat a tablespoon of oil over medium heat, then add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Add the beef shank to the pot and brown on all sides for about 5-7 minutes.
- Pour in the broth, then add cumin, oregano, salt, and pepper. Bring to a boil and then reduce to a simmer.
- Cover the pot and let it cook for about 30 minutes, or until the beef is tender.
- Add the diced zucchini, chayote, green beans, and tomato to the pot. Stir well and continue to simmer for another 15 minutes until the vegetables are tender.
- Adjust seasoning as needed, then serve hot, garnished with fresh cilantro.
