Ingredients

  • Beef shank - 300 grams
  • Zucchini - 1 medium, diced
  • Green beans - 100 grams, trimmed and cut into pieces
  • Chayote - 1 medium, diced
  • Tomato - 1 medium, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Chicken or beef broth - 500 ml
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Cilantro - for garnish

Steps

  1. In a large pot, heat a tablespoon of oil over medium heat, then add the chopped onion and minced garlic. Sauté until the onion is translucent.
  2. Add the beef shank to the pot and brown on all sides for about 5-7 minutes.
  3. Pour in the broth, then add cumin, oregano, salt, and pepper. Bring to a boil and then reduce to a simmer.
  4. Cover the pot and let it cook for about 30 minutes, or until the beef is tender.
  5. Add the diced zucchini, chayote, green beans, and tomato to the pot. Stir well and continue to simmer for another 15 minutes until the vegetables are tender.
  6. Adjust seasoning as needed, then serve hot, garnished with fresh cilantro.
