Ingredients

  • Chicken thighs - 300 grams
  • Mole sauce - 100 grams
  • Cream cheese - 50 grams
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 small, chopped
  • Bell pepper - 1 medium, chopped
  • Cilantro - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lime - 1, juiced

Steps

  1. Preheat your oven to 190°C (375°F).
  2. In a skillet over medium heat, add olive oil and sauté chopped onion and garlic until translucent, about 3-4 minutes.
  3. Add the chopped bell pepper and cook for another 2-3 minutes until soft.
  4. In a bowl, mix the mole sauce and cream cheese until well combined. Add sautéed vegetables, lime juice, salt, and pepper.
  5. In a baking dish, place the chicken thighs and pour the mole mixture over them, ensuring they are well coated.
  6. Cover the baking dish with aluminum foil and bake for 25 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
  8. Garnish with chopped cilantro before serving.
