- Chicken thighs - 300 grams
- Mole sauce - 100 grams
- Cream cheese - 50 grams
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1 small, chopped
- Bell pepper - 1 medium, chopped
- Cilantro - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lime - 1, juiced
Steps
- Preheat your oven to 190°C (375°F).
- In a skillet over medium heat, add olive oil and sauté chopped onion and garlic until translucent, about 3-4 minutes.
- Add the chopped bell pepper and cook for another 2-3 minutes until soft.
- In a bowl, mix the mole sauce and cream cheese until well combined. Add sautéed vegetables, lime juice, salt, and pepper.
- In a baking dish, place the chicken thighs and pour the mole mixture over them, ensuring they are well coated.
- Cover the baking dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
- Garnish with chopped cilantro before serving.
