- Red bell pepper - 1/2, diced
- Green onion - 2, sliced
- Fresh cilantro - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Avocado - 1/2, sliced (for serving)
- Queso fresco - 30 grams, crumbled (for garnish)
Steps
- In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the tortilla strips and fry until they are crispy and golden brown, about 3-4 minutes. Remove the tortillas and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Add the diced red bell pepper and sliced green onion, sautéing for about 2-3 minutes until softened.
- Crack the eggs into a bowl, season with salt and black pepper, and whisk until well combined.
- Pour the whisked eggs into the skillet with the sautéed vegetables. Stir gently until the eggs are just starting to set, about 2 minutes.
- Add the crispy tortilla strips back into the skillet with the eggs. Gently fold everything together until the eggs are fully cooked, about 1-2 more minutes.
- Remove from heat and sprinkle with fresh cilantro and crumbled queso fresco. Serve immediately with sliced avocado on the side.
