  • Eggs - 4 large

  • Olive oil - 2 tablespoons
  • Red bell pepper - 1/2, diced
  • Green onion - 2, sliced
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Avocado - 1/2, sliced (for serving)
  • Queso fresco - 30 grams, crumbled (for garnish)

Steps

  1. In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the tortilla strips and fry until they are crispy and golden brown, about 3-4 minutes. Remove the tortillas and set aside.
  2. In the same skillet, add the remaining tablespoon of olive oil. Add the diced red bell pepper and sliced green onion, sautéing for about 2-3 minutes until softened.
  3. Crack the eggs into a bowl, season with salt and black pepper, and whisk until well combined.
  4. Pour the whisked eggs into the skillet with the sautéed vegetables. Stir gently until the eggs are just starting to set, about 2 minutes.
  5. Add the crispy tortilla strips back into the skillet with the eggs. Gently fold everything together until the eggs are fully cooked, about 1-2 more minutes.
  6. Remove from heat and sprinkle with fresh cilantro and crumbled queso fresco. Serve immediately with sliced avocado on the side.
