  • Garlic - 1 clove, minced
  • Cilantro - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Avocado - 1/2 medium, sliced

Steps

  1. Wash and dice the zucchini into small pieces, about 1 cm in size.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and red bell pepper, and sauté for 3-4 minutes until softened.
  3. Add the minced garlic and zucchini to the skillet, seasoning with salt and black pepper. Cook for another 5-6 minutes, stirring occasionally, until the zucchini is tender and slightly golden.
  4. In a bowl, whisk the eggs until well combined. Pour the eggs into the skillet with the vegetables and gently stir to combine.
