Ingredients

  • Ground beef - 300 grams
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Tomato - 1 medium, chopped
  • Olives - 50 grams, sliced
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Eggs - 2 large

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, sauté until softened, about 3-4 minutes.
  3. Add ground beef to the skillet and cook until browned, breaking it apart with a spoon, about 5-7 minutes.
  4. Stir in the diced red bell pepper, zucchini, chopped tomato, olives, cumin, oregano, paprika, salt, and black pepper. Cook for another 5-7 minutes until the vegetables are tender.
  5. Remove from heat and stir in chopped cilantro.
  6. Transfer the mixture to a greased baking dish, spreading it evenly.
  7. Make two small wells in the meat mixture and crack an egg into each well.
  8. Bake in the preheated oven for 15-20 minutes, or until the eggs are cooked to your liking.
  9. Remove from oven, let cool slightly, and serve warm.
