- Ground beef - 300 grams
- Olive oil - 1 tablespoon
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Tomato - 1 medium, chopped
- Olives - 50 grams, sliced
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Eggs - 2 large
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, sauté until softened, about 3-4 minutes.
- Add ground beef to the skillet and cook until browned, breaking it apart with a spoon, about 5-7 minutes.
- Stir in the diced red bell pepper, zucchini, chopped tomato, olives, cumin, oregano, paprika, salt, and black pepper. Cook for another 5-7 minutes until the vegetables are tender.
- Remove from heat and stir in chopped cilantro.
- Transfer the mixture to a greased baking dish, spreading it evenly.
- Make two small wells in the meat mixture and crack an egg into each well.
- Bake in the preheated oven for 15-20 minutes, or until the eggs are cooked to your liking.
- Remove from oven, let cool slightly, and serve warm.
