Ingredients
- Dried guajillo chiles - 2
- Fresh jalapeño - 1 (small, chopped)
- Agave syrup - 100 ml
- Lemon juice - 30 ml
- Water - 200 ml
- Salt - 1/4 teaspoon
Steps
- Remove the stems and seeds from the dried guajillo chiles and place them in a saucepan with 200 ml of water. Bring to a boil and then reduce heat, simmering for about 10 minutes until the chiles are soft.
- Once softened, drain the chiles and transfer them to a blender along with the chopped jalapeño, agave syrup, lemon juice, and salt. Blend until smooth, adding a little of the reserved water if necessary to achieve a spreadable consistency.
- Return the blended mixture to the saucepan and cook over medium heat for an additional 10-15 minutes, stirring frequently, until the mixture thickens to a jam-like consistency.
- Remove from heat and let the mermelada cool before transferring it to a jar. Store in the refrigerator for up to two weeks.
