  • Zucchini, diced - 1 medium
  • Mushrooms, sliced - 150 grams
  • Vegetable broth - 1 liter
  • Canned hominy, rinsed and drained - 400 grams
  • Dried oregano - 1 teaspoon
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lime, cut into wedges - 1

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and garlic, sautéing until translucent, about 3-4 minutes.
  3. Stir in the diced carrots, celery, and red bell pepper, cooking until softened, about 5-7 minutes.
  4. Add the zucchini and mushrooms, cooking for another 5 minutes until they begin to soften.
  5. Pour in the vegetable broth and bring to a boil.
  6. Add the rinsed hominy, oregano, cumin, chili powder, salt, and black pepper.
  7. Reduce the heat to low and let simmer for 15-20 minutes, allowing the flavors to meld.
  8. Serve hot with lime wedges on the side for squeezing.
