Ingredients

  • Beef tripe - 300 grams
  • Water - 1 liter
  • Dried guajillo chilies - 4 units
  • Dried ancho chilies - 2 units
  • Garlic - 3 cloves
  • Onion - 1 medium, chopped
  • Cumin powder - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish
  • Lime - 1, cut into wedges

Steps

  1. Rinse the beef tripe under cold water and cut it into bite-sized pieces.
  2. In a large pot, bring 1 liter of water to a boil. Add the tripe and cook for 15 minutes. Drain and set aside.
  3. In a dry skillet, toast the guajillo and ancho chilies over medium heat for about 2-3 minutes until fragrant. Remove stems and seeds.
  4. In a blender, combine the toasted chilies, garlic, cumin, oregano, and 1 cup of water. Blend until smooth.
  5. In the same pot, add a little oil and sauté the chopped onion until translucent.
  6. Add the blended chili mixture to the pot with the sautéed onion and bring to a simmer.
  7. Return the cooked tripe to the pot, season with salt and black pepper, and let it simmer for about 60 minutes on low heat until tender.
  8. Serve hot, garnished with fresh cilantro and lime wedges on the side.
