Ingredients
- Beef tripe - 300 grams
- Water - 1 liter
- Dried guajillo chilies - 4 units
- Dried ancho chilies - 2 units
- Garlic - 3 cloves
- Onion - 1 medium, chopped
- Cumin powder - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
- Lime - 1, cut into wedges
Steps
- Rinse the beef tripe under cold water and cut it into bite-sized pieces.
- In a large pot, bring 1 liter of water to a boil. Add the tripe and cook for 15 minutes. Drain and set aside.
- In a dry skillet, toast the guajillo and ancho chilies over medium heat for about 2-3 minutes until fragrant. Remove stems and seeds.
- In a blender, combine the toasted chilies, garlic, cumin, oregano, and 1 cup of water. Blend until smooth.
- In the same pot, add a little oil and sauté the chopped onion until translucent.
- Add the blended chili mixture to the pot with the sautéed onion and bring to a simmer.
- Return the cooked tripe to the pot, season with salt and black pepper, and let it simmer for about 60 minutes on low heat until tender.
- Serve hot, garnished with fresh cilantro and lime wedges on the side.
