Ingredients
- Beef tripe - 200 grams, cleaned and cut into small pieces
- Water - 1 liter
- Garlic - 2 cloves, minced
- Onion - 1 medium, diced
- Dried oregano - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - to taste
- Pepper - to taste
- Eggs - 4 large
- Olive oil - 1 tablespoon
- Fresh cilantro - for garnish, chopped
- Lime - 1, cut into wedges
Steps
- In a large pot, bring 1 liter of water to a boil and add the cleaned tripe. Boil for about 15 minutes, then drain and rinse with cold water.
- In the same pot, heat a tablespoon of olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent.
- Add the boiled tripe back to the pot along with 1 liter of fresh water, oregano, chili powder, salt, and pepper. Bring to a simmer and cook for 20-25 minutes until the tripe is tender.
- In a separate bowl, whisk the eggs with a pinch of salt and pepper.
- In a non-stick skillet, scramble the eggs over medium heat until cooked through.
- To serve, place the menudo in bowls, top with scrambled eggs, and garnish with chopped cilantro and lime wedges.
