Ingredients

  • Beef tripe - 200 grams, cleaned and cut into small pieces
  • Water - 1 liter
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, diced
  • Dried oregano - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Eggs - 4 large
  • Olive oil - 1 tablespoon
  • Fresh cilantro - for garnish, chopped
  • Lime - 1, cut into wedges

Steps

  1. In a large pot, bring 1 liter of water to a boil and add the cleaned tripe. Boil for about 15 minutes, then drain and rinse with cold water.
  2. In the same pot, heat a tablespoon of olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent.
  3. Add the boiled tripe back to the pot along with 1 liter of fresh water, oregano, chili powder, salt, and pepper. Bring to a simmer and cook for 20-25 minutes until the tripe is tender.
  4. In a separate bowl, whisk the eggs with a pinch of salt and pepper.
  5. In a non-stick skillet, scramble the eggs over medium heat until cooked through.
  6. To serve, place the menudo in bowls, top with scrambled eggs, and garnish with chopped cilantro and lime wedges.
